Rudi Ghequire leads the way into one of the dark stone basements for a tour of Kazematten brewery. We’re inside a casemate, a large underground space that was initially built as a fortress for the city in the 17th century but which has since played important roles for the locals of Ypres, including that of an ice cream factory, a mushroom farm, a cheese ripening hall and, most recently, a brewery.
