The author Roald Dahl, one imagines, must at one time have met a chocolate-maker, which inspired his creation of the character of Willy Wonka. Wonka may be an exaggeration, but all chocolate-makers, in our experience, are a little bit bonkers, and Laurent Gerbaud is no exception. Perhaps it’s the prolonged exposure to that most
alchemical of foods, but chocolatiers seem to think nothing of attempting the apparently impossible – like trying to demonstrate that chocolate and beer can go together.

On the basis of a tasting at Gerbaud’s tearoom-shop, directly across the Rue Ravenstein  from the Bozar temple of culture, we’re here to report that the seemingly-impossible isn’t impossible after all.
